Kristen Beddard has worked in marketing communications for the past ten years in both New York City and Paris in the food, agriculture and financial sectors with clients like Kraft, Vanguard, American Express and Lady Moon Farms. She is best known for reintroducing kale to France with her own initiative, The Kale Project, which was featured in the New York Times and coined her the “kale crusader.” She is the author of Bonjour Kale: A memoir of Paris, love and recipes. With plans to return to the New York area in 2016, Kristen will continue working in marketing and project management in the food and health sectors.
